101 in 1001

What better way to bring in the New Year than to start 101 in 1001



The Challenge:
Complete 101 preset tasks in a period of 1001 days.
The Criteria:
Tasks must be specific (ie. no ambiguity in the wording) with a result that is either measurable or
clearly defined. Tasks must also be realistic and stretching (ie. represent some amount of work on
your part).
Why 1001 Days?
Many people have created lists in the past - frequently simple challenges such as New Year's
resolutions or a 'Bucket List'. The key to beating procrastination is to set a deadline that is realistic.
1001 Days (about 2.75 years) is a better period of time than a year, because it allows you several
seasons to complete the tasks, which is better for organising and timing some tasks such as
overseas trips, study semesters, or outdoor activities.

End Date: September 28, 2014

2011 in review

This year has seriously been amazing! Having so many opportunities just bless a girl like me and participating with the amazing friends i have just makes it even better.

This year was a serious year, i had my first level of Exams that the Lord helped me through, I promise to study this year. I planned the trip of a life time with these people:

So in summer of 2011 i went to America and it was off the rails!! Seriously i didn't think i could be so blessed to know a group of people that i had only known for a year or so! We got up to so many things like going to our first Braves game,


and going to some beautiful places, 


oh and summer camp, that was AMAZING! 

God just showed up and was so powerful, i met some lovely new friends and reconnected with some i wasn't close to from previous years!

they made sure i had the time of my life and that i was never alone! 

I will forever be grateful to Riverstone church for bringing a summer camp to Scotland and letting me go to theirs. 

These next people you are about to meet are life changing! They allowed me to stay at their home for 3 weeks and they are my role models!

They are like a second mother and my fourth sister that i can see in summer! :) Skype dates are just great with them! 

Back in Scotland we had our summer camp: 


Even though the group is so small, EVER year, without fail, God shows up and breaks our hearts for more of Him. It is the week I look forward to every year. And has been the highlight to my summer for the past 4 years! 

Just last month I went up to North Berwick with a group of friends for a fun day trip. We climbed most of the way up this hill and really just caught up with friends after so long of being a part.



This year I got a sudden urge for baking/cooking, I have always loved it but when i got a job, and i made all the food, I got challenged and I loved it! i especially love baking cupcakes and cakes and hopefully we will see more baking blogs around here soon! I am going to be in a cooking competition at the end of January, and i'll be sure to let you know how I got on :)

This Year i have became super close to these two girls, they are sisters, their bond is so different from my older sister and I, They are like best friends and tell each other everything. I love them both so much! 


This is my year and I am excited for the next one! I am excited to grow closer to God and Challenge my cooking and my Photography. This next year in School I need to work hard for my important exams, I have America to look forward to again and then Scotland camp and hopefully I will get into my photography class in school in the term after summer :)

i love to bake!

Okay so today,  I'm making cupcakes. Owl cupcakes if you couldn't tell.

Now that i have my own computer i think i'll be around here more often, please follow me on this and pass me on :)

If you don't already know, I love love love me some cupcakes! I'm just a beginner but I love the adventure and i want to be more creative in my everyday life. Today i will set out to the shops to purchase the remaining ingredients to make these little beauties!



I love how they are perfectly imperfect. Owls mean so many things to some of my friends, some refer to them as their college mascot (would you say mascot for KSU?) and others its their favourite animal and so on and so forth.

Owl cupcakes.

Ingredients for 14-18 cupcakes

For the cupcake:

3-1/2 tbsp soft margarine
115g brown sugar
2 large egg
115g plain flour
1/2 tbsp baking soda
25g cocoa powder
125 ml soured cream

For the icing:
125g plain chocolate 
(if you want it sweeter use milk chocolate)
2 tbsp caster sugar
150ml soured cream.

For decoration:
~40 oreo original cookies (2 per cupcake)
1 or 2 packs of reeses pieces.



Method...


1. Place ~18 paper baking case in a muffin tin, if you don't have double up the cases and place on a baking tray. Then preheat the oven to 180*C/350*F/Gas mark 4.

2. Put margarine, sugar, egg, flour, baking soda and cocoa in a large bowl and wisk with and electric hand mixer until smooth. Using a metal spoon, fold in the sour cream and divide the batter evenly between the cases.

3. Spoon the mixture between the ~18 paper cases, and place in the preheated oven for 20minutes.

4. once they are out the oven you can prepare the icing. To do this break up the chocolate and place in a heat proof bowl. Place over a simmering pan/pot of water and allow to melt. Once taken off the heat leave to cool for a few minutes.

5. Evenly spread the icing and prepare the oreo's in half, this isn't hard but practice will make perfect. (here's how it should look minus the Reeses) 



6. now get 2 brown reeses and place a small dot of the leftover icing one the back to allow it to stick to the oreo, place an orange/yellow one for the nose. 

7. With the remaining half of the oreo (the part with no icing) you need to cut of the edges to make the little bits above the eyes. (this step is not required)

And there you have it Owl cupcakes in just over half an hour.
